Häufige Fragen zum Rindfleisch-Sortiment
Aus welchen Herkünften kommt euer Rindfleisch?
Aus neun Herkünften: Argentinien, Uruguay, Brasilien, Australien, Kanada, USA, Irland, Deutschland und weiteren europäischen Ländern. Dazu kommt Wagyu aus Japan. Direkt im Ursprung kaufen wir in Südamerika und Japan ein, die übrigen Herkünfte beziehen wir über etablierte Handelswege.
Was bedeutet Grassfed, was Grainfed?
Grassfed beschreibt eine grasbasierte Fütterung – das ist nicht automatisch gleichbedeutend mit durchgängiger Weidehaltung. Grainfed steht für getreidebasierte Fütterung mit meist gleichmäßigerer Marmorierung. Aus Argentinien und Uruguay führen wir beides, Australien, Kanada und die USA sind bekannt für Grainfed.
Führt ihr frische und tiefgefrorene Ware?
Ja. Welche Kombination aus Herkunft und Zustand verfügbar ist, hängt vom Artikel ab. Südamerikanische Ware führen wir frisch und tiefgefroren, Ware aus Irland, Deutschland und Übersee überwiegend frisch.
Was bedeutet PAD bei euren Artikelbezeichnungen?
Die Ware ist pariert, also bereits zugeputzt. Das bedeutet weniger Arbeit und weniger Abschnitt im Markt, dafür einen höheren Kilopreis.
In welchen Gewichtsklassen gibt es Roastbeef?
Gestaffelt ab 3,5 kg, 4,0 kg, 5,0 kg und darüber. Filet führen wir nach lbs.-Klassen, teils mit und teils ohne Kette.
Führt ihr Dry Aged?
Nein. Dry Aged gehört bewusst nicht zu unserem Sortiment.
